冷凍された状態のホタテは、冷蔵庫に移し半日ほどかけてゆっくりと解凍してください。ゆっくりと解凍したほうが旨み成分が流れ出ず美味しくいただけます。解凍を急ぐ場合はポリ袋に入れて口をしっかり閉じたまま流水に当てるか、直接塩水に浸します。電子レンジでの解凍は、ホタテの品質を大きく損ないますのでおすすめしません。また、真水に浸すと水っぽくなるので注意してください。
